Wine of the Month: Gran Caus
December is here and that can only mean one thing: it’s time for our Wine of the Month.
This is a very special month. Christmas is getting closer and we’re running two fantastic Christmas Menus especially designed for these festive days by our Executive Chef Paco Pérez. For this reason our sommelier Filippo has picked Gran Caus, a wonderful white wine from Penedès that goes perfectly well with all these exclusive Tastets.
Gran Caus is made in Penedès. The name may sound familiar to some, as it is the same place where Catalan sparkling wine, Cava, is made. The wine producer is Can Ràfols dels Caus, and its peculiar location within the region of Penedès results in very original and unique wines.
A very unique wine
This vintage white wine of 2017 is a blend of the local variety of Xarel·lo, Chenin Blanc and Chardonnay, and it has a high level of complexity because it is made from very old vines. This makes a huge difference to the wine. As old vines have longer, deeper roots, these can extract more richness from the soil, passing then this richness onto the wine.
Gran Caus is aged in the bottle for at least two years before it’s released. Despite this, you can still get a slight smoky flavour that can be easily confused with oak aging. However, the wine is purely fermented from the wild natural yeast present in the grapes. Because of the old vines, the wine can reach this high level of complexity even if it’s not barrel-aged.
On the nose you find citrus character with pear and red apple, and a little sweet character with a touch of balsamic, honeysuckle and sweetflower. It’s all about the richness of the wine.
The flinty minerality is the key to this wine and what makes it so unique. It has a good backbone with acidity and good creaminess with a slight smoky flavour. Gran Caus is rich with a good consistency on the palate with a lean, fresh and long finish. The sommelier compares this wine with a Maconnais Chardonnay style without the oak aging aspect, a fresh style of Chardonnay.
A wine to enjoy over our Christmas Tastets
As always, we like to ask Filippo what he would pair his choice with. He tells us it is a very elegant wine to accompany our Christmas Menu. Focusing only on these festive dishes, he mentions the Tartar de Salmó and the Ostra del Cap de Creus will match very well with the freshness but also richness of this wine. Also, our Parmentier de Bolets and Vieira en Fricandó go incredibly well with it. The wine doesn’t overpower the dishes but at the same time it has enough structural length to accompany their persistence.
